The overview

Soft tuff eroded into towers and cut into dwellings for two thousand years — and, on clear mornings, a sky full of balloons above it.

Cappadocia's landscape is the result of volcanic ash compacted into tuff and then eroded into cones, ridges and canyons. People have been carving into it since at least the Bronze Age, producing rock-cut churches with intact Byzantine frescoes, whole villages of cave houses and multi-level underground cities that sheltered thousands. Göreme is the tourist centre; Uçhisar, Ortahisar and Ibrahimpaşa are quieter bases with the same access. The balloon flights are genuinely spectacular and genuinely weather-dependent — around a third of scheduled mornings are cancelled for wind, so leave several days of slack if flying matters to you. The valleys are free to walk and almost empty by mid-afternoon.

Fly at sunrise

Flights lift around dawn and last an hour. Book a company with a good safety record and accept that weather may cancel.

Walk Rose to Red Valley

About 7km of easy trail with several unmarked chapels; go in late afternoon for the colour.

Descend an underground city

Derinkuyu is deeper, Kaymaklı is wider. Both are cramped — not for the claustrophobic.

3–4 days in Cappadocia

A structure that works, not a schedule to follow to the minute. Move the days around to suit the weather.

Day 1
Göreme and orientation
Open-air museum in the afternoon, sunset from Uçhisar or Sunset Point.
Day 2
Balloon and valleys
Dawn flight, sleep, then Rose and Red valleys in the late afternoon.
Day 3
Underground and pottery
Derinkuyu in the morning, Avanos pottery workshops on the river in the afternoon.

What to eat

Testi kebab
Meat and vegetables slow-cooked in a sealed clay pot, cracked open at the table.
Mantı
Tiny dumplings under garlic yoghurt and chilli butter — Kayseri, next door, claims the best.
Pekmez
Grape molasses eaten with tahini at breakfast, a staple of the region's vineyards.

Local etiquette

Frescoes are damaged by flash — the bans in rock churches are enforced.
Dress modestly for mosques and bring socks; shoes come off.
Tea is offered constantly and refusing outright reads as cold; accept one.

Practical notes

Book the balloon for your first available morning so cancellations can be rescheduled.
Valley trails are unmarked in places; download an offline map before setting out.
Nevşehir and Kayseri both have airports — Kayseri usually has more flights.
Cave rooms vary enormously; check for windows and ventilation in reviews.
